
I just baked this, the easiest coconut custard recipe you could imagine. The pie makes its own crust. Here's the recipe.

Later on, I'm going to make this. There's a secret to this recipe too. Dump a bunch of fruit in a bowl; pour a box of instant vanilla pudding over it; mix.
And what, you ask, am I planning to do with these treats? Tonight is the monthly meeting of my Walk to Emmaus Reunion Group. It's always potluck, and these are my pots.

Oh, YUM!!!! I love, Love, LOVE coconut custard pie! Will look at the recipe in a minute to see if this is the same as my "All Things are Possible" pie - a coconut pie that also makes its own crust and is mixed in the blender.
I am intrigued by the fruit salad recipe, too.
AMIL is HOME from the hospital! All of her tests were normal and she is past delighted to be home, as we are to have her home. Thank you for your prayers.
