I saw the recipe for this dish on MyRecipes.com yesterday. My taste buds immediately sat up and took notice. I decided I'd make it for dinner last night. I halved the recipes and made two servings, ate one and saved one for later.
It was an extremely easy dish to make, uses a small bowl and one pan, and the taste is amazing. Simple, good, and not heavy on calories. Of course, I was tempted to add some angel hair pasta, which would have greatly increased the calorie count. But I restrained myself and found I really didn't need the pasta after all.
If you're looking for a simple but great tasting dish to prepare quickly on these hot evenings, I recommend this one. And if it isn't hot where you are, well hey! I think it would even be good in cold weather.

It's too early here for me to think about dinner, but I may have to revisit the recipe this afternoon!

Another scorcher of a day here and our chance for rain disappeared. Boo hoo!

YUMMO! I didn't KNOW about that recipe site, but I just went over & bookmarked it! THANK YOU! What a delicious meal that will make. I like very simple dishes starting about April and continuing through the first of October. Barbara Anne - where are you located? I'm in Houston & we just missed OUR rain chances, too for the day. Sigh! (Sorry for adding notes to other bloggers in YOUR blog comments, Susan! LOL! I was just curious if she's in H-Town!) LOVE YOU!!!
