Bill came back over today, and the guys worked straightening up the basement again. They have done a terrific job.
I made a late lunch for us. I sliced the leftover steak from last night, sauted some sliced onions and mushroom, added a can of beef broth, then dumped in the sliced steak and heated it through. I served it over rice with buttered broccoli and sliced tomatoes on the side.
But the best part of the meal was dessert: blueberry cobbler that I made with blueberries that Paul gave us from his garden. Served warm with a scoop of vanilla ice cream, it was beyond scrumptious--if I do say so myownself.
EASY BLUEBERRY COBBLER RECIPE
- 4 cups fresh blueberries
- 1 tablespoon lemon juice
- 1 large egg, slightly beaten
- 1 cup sugar
- 1 cup all-purpose flour
- 6 tablespoons butter or margarine, melted
- Vanilla ice cream or whipped cream (optional)
Preheat oven to 375°. Place blueberries in a lightly greased 8-inch square baking dish; sprinkle with lemon juice. Stir together egg, sugar, and flour in a medium bowl until mixture resembles coarse meal. Sprinkle over fruit. Drizzle melted butter over topping. Bake at 375° for 35 minutes or until lightly browned and bubbly. Let stand 10 minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.

Susan, this sounds and looks delicious. Tomorrow is my mother's birthday, and I think I will make it for her. She loves cobbler.

Looks scrumptious! I have frozen some blueberries for this use in future months and have made one cobbler using peaches. AMIL made a blueberry-pineapple crumble that was to die for. Let me know if you'd like that recipe. I plan to use your recipe! BTW, did you double your recipe for the cobbler in the photo? It looks to me like it's in a 9"x13" dish. Just wondering!
Think I'll use your idea for leftover steak, too!
