This is what I made for lunch yesterday, yellow squash patties. They were so good. The trouble is, the recipe made 12 patties, much more than I could eat. And Jesse wouldn't eat a squash if his life depended on it, even though these patties have cheddar cheese (Jesse's first love) in them. So I put the leftovers in the fridge to have for lunch today. Even so, I'll likely have to toss some of them.

Sounds like it's time for a family hen party for all of the near-by relatives who like squash! The yellow squash patties vertainly look scrumptious and I'd happily drive over to eat some if the commute weren't so long.
You've made me wish I'd gotten yellow squash at the grocery store. I have all of the other ingredients.
Before tossing them, I'd try freezing them as Pat asked about. For similar things that we freeze, we give them a quick heat in the microwave, and back into the frying pan to crisp up the sides, flip, fry side two, serve, enjoy. It's worth a try.
