Hot Pockets, SuSu Style

When I come up with a dish that my grandson Jesse likes, I rejoice. It's very hard to feed someone as picky as he is.

I didn't have high hopes that my "hot pockets" would pass muster. So boy! was I surprised when Jesse not only deemed them acceptable but wanted more.

If you have a picky teenager or guy that you are charged with getting food into, you might give these a try.

They're very simple to make.

Ingredients: 1 pound ground beef, 1 pack taco seasoning, 1 can Grands biscuits (8 count), grated cheddar, melted butter

1. Preheat oven to 350 degrees.

2. Brown beef and add seasoning, according to package directions. Divide into 4 equal portions.

3. Roll out biscuits flat. Place one portion of beef mixture in center of one flattened biscuit. Sprinkle with a goodly amount of shredded cheese (optionally, you can use sliced cheddar). Cover with second biscuit. Seal edges of biscuit.* brush tops of pies with melted butter.

4. Repeat for remaining biscuits. Poke a few holes in top of each meat pie.

5. Place meat pies on cookie sheet and bake for about 17 minutes or until lightly brown.

I told Jesse we could make them in different flavors: e.g., with spaghetti sauce, pepperoni, and mozzeralla. He said, "Why ruin a good thing. Keep it Mexican."

*I use this Pampered Chef "Cut and Seal" tool to seal the edges of the biscuits. But you can simply pinch the edges of the biscuits together to seal.

Oh YUM!! Love the idea and this would float our boats here tho we're both 63. Perhaps with a taco salad ... but don't let Taco hear that!
