I provided dessert for Sister Supper last night: Fresh Apple Cake with vanilla ice cream and caramel sauce (Ice cream and sauce not shown.). Recipe below.
We got a jump on the autumn season last night with a September Sister Supper at my sister Joanne's house. It was an affair of much fun and fellowship. Present were all three sisters, my pretty niece India, and my handsome nephew Jed. Andy forgot, and Jesse had something else to do. They really missed a good one.
We chowed down on two kinds of chicken (grilled and fried), two kinds of potatoes (mashed and roasted), two kinds of beans (green and baked), salad, crescent rolls, and fresh apple cake with vanilla ice cream and caramel sauce.
When the eating was all done, we watch the first episode of the first season of "Downton Abbey." We're getting ready for the new season of Downton, which starts in January. All three sisters are fans of this show. The nieces, nephews, and grandson--well, not so much, I think.
This was the first Fresh Apple Cake I had ever mad, and it was right successful. I used a combination of recipes that I found online, and it turned out scrumptiously. You'll find my recipe below. But there are many, many variations of this wonderful dessert. Just Google "Fresh Apple Cake Recipe" and see for yourself.
Susan's Fresh Apple Cake
1 1/2 cups cooking oil
2 cups sugar
3 cups all-purpose flour
3 eggs
1 cup chopped walnuts
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon nutmeg
2 teaspoons vanilla flavoring
3 Granny Smith apples, peeled and chopped
Canned caramel frosting
Combine oil and sugar. Add well beaten eggs and vanilla. Combine flour, soda, salt, and nutmeg. Add dry ingredients to sugar/oil mixture. Stir in chopped apples and nuts. Combine all ingredients thoroughly.
Spray a 9" x 13" pan with baking spray. Pour batter into pan and bake in preheated 325-degree over for an hour, or until a toothpick inserted in the center comes out clean.
Melt canned frosting over low heat and pour over cake. Or serve it as a sauce and let guest spoon it over their cake.
ENJOY!

Hi Susan, I received the journal yesterday. I didn't even have time to open it because I was busy all day at the county fair with the Garden Club flower show. We went to see the movie 2016 and came home and went to bed.
I will open it this morning and I hope to remember to put some stars in there. HA! Just think, we will have our books in November. I can't wait.
