I haven't written two posts in one day in a long time, but here goes. My friend Sherry called me a while ago with a request for the sweet potato-pineapple pie recipe. Her call reminded me that I intended to post the recipe on my blog because several of you had asked for it. So here 'tis.
Preheat the oven to 400°F. Prick the pie shell all over with a fork. Place the pie shell on a baking sheet and bake until the shell is lightly browned, about 20 minutes. Remove the pie shell from the oven.Sweet Potato-Pineapple Pie
Servings: Servings: 8
Ingredients:
2 cans (15 ounces) yams in light syrup, drained and mashed
1 (9-inch) uncooked pie shell
3 large eggs
1/2 cup packed light-brown sugar
1/2 cup canned evaporated milk
1 can (8 ounces) crushed pineapple, well drained
4 tablespoons (1/2 stick) butter or margarine, melted
1 teaspoon ground cinnamon
Whipped Cream or Cool Whip
Preparation:
Mash the yams with a potato masher or an electric mixer.
Whisk the eggs and brown sugar in a medium bowl to dissolve the sugar. Add the mashed yams, evaporated milk, pineapple, butter and cinnamon and whisk well to combine. Pour into pie shell.
Return the pie to the oven and bake 10 minutes. Reduce the heat to 350°F. Bake until a knife inserted in the center exits clean, about 45 minutes. Cool completely. Serve with whipped cream if desired.

I'm going to pass this on to my son the piemaker cause I think he will love it. I have given up on pies myself....baking them, not eating them...as piecrust and I do not get along. Take care!

Boy, does that EVER look delicious! And I HATE pineapple! But I love sweet potato pie. I may just have to do one sans the pineapple for ME, and one WITH for my housemate who will LOVE this recipe! THANK YOU FOR SHARING! (And note to Teresa: Pie crust is my ENEMY! LOL! That's why I am a big fan of Ritz frozen pie shells!)
