I didn't feel like getting ready for church this morning, so I made a pan of muffins instead. I had almost a full container of fresh blueberries that weren't going to last much longer. I decide that a batch of Easy Blueberry Muffins was the place to put them
| EASY BLUEBERRY MUFFINS | |
| 1 3/4 c. all-purpose flour 3/4 c. sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 c. fresh or unthawed frozen blueberries 3/4 c. milk 1 egg 1/3 c. melted butter In large bowl, combine flour, sugar, baking powder and salt. Add milk, egg and butter to dry mix. Stir until moist. Add blueberries. Spoon batter into 12 to 15 paper-lined or greased muffin cups. | |
That's the recipe I used, but I had more like a cup and a half of fresh blueberries instead of a cup of frozen ones. I can assure you, they made a wonderful brunch.
Now I need to go upstairs and sew, but I think the baking session took all my spoons. Reading on the sofa is probably more realistic.

Oh, I was just thinking of blueberry muffins this morning, but DH made banana bread last night so that needs to be eaten and enjoyed before any more baking happens here.

Last weekend we had the blizzard and today the high is 62*F. Lots of snow remains and much of the ground where there's no snow is all is muddy and mushy.
