Some of you asked for the recipe for crockpot chicken and dressing, so I'm posting the recipe that my friend Martha shared with us at bee. I have not made it yet, but I know already that I'll do a bit of tweaking. Instead of using half cornmeal and half flour, I will likely used cornmeal mix, which I always use to make my cornbread. I'll also probably add a can of cream of chicken soup and use plain milk instead of buttermilk, only because I don't want to buy a container of buttermilk and have to throw most of it away. (We don't drink that stuff here.) Otherwise, I'll probably go by Martha's directions.
Crockpot Chicken and Dressing
5 3ggs
1 1/2 cups self rising flour
1 1/2 cups self rising cornmeal
3/4 cup buttermilk
2 1/2 Tablespoons oil
3/4 cup chopped celery
1 cup chopped onion
1 small chicken or pieces to equal (cook, debone, and chop into large pieces)
58 oz. chicken broth
1 Tablespoon salt
2 Tablespoon sage
1/2 teaspoon pepper
1 stick butter or margarine
Mix first 5 ingredients If mixtre is too thick, add water. Cook for cornbread. Cool and crumble in large bowl. Add celery, onions, and pour broth over mix. Add cut-up chicken, sage, salt, and pepper. Mix well. Put in large crockpot and push stick of butter into center of mixture. Cook 3 hours on low. Stir occasionally.

Sophie got a hair cut on Wednesday. Jesse thinks they took a little too much hair off, and probably so for the cold weather. I've been putting her Christmas sweater on her when she goes outside. But she'll be a hair ball again in no time. And she's so much easier to keep clean this way.

Good morning Susan, I like this recipe. I will follow your advice on the changes. I use cornbread mix as well.
I think Sophie looks adorable. We are getting our Cheri' groomed on Monday. Her poodle hair is also easier when shorter.

I made a turkey and dressing version of this recipe (I think it was called Thanksgiving in a crockpot) last year and was surprised how well it turned out. Usually I'm invited elsewhere for the holiday meal and this was a good way to have some Thanksgiving smells and leftovers at my house.
Poor Sophie. As another Sophie waiting for a bad haircut to grow out, I am sympathetic. The good thing about hair--on people and pets--is that it GROWS and so no bad haircut has to be a life long tragedy :-)

Sounds delicous! I, too, wondered at the number of eggs as the first listed ingredient.
In my aunt's Home Demonstration Club cookbook (from 1972), this is the substitution way to "make" buttermilk:
For 1 cup buttermilk (aka "sour milk) put 1 TBSP lemon juice OR vinegar in a 1 cup measuring cup and add sweet milk to make 1 cup.
Sophie looks so cute but I'm glad she has a sweater to wear when she's outdoors.

YUMMMMMMM! I am MAKING tons of food for the holiday because I have a houseful of Indians coming (and my folks can SERIOUSLY eat! LOL!) but I will partake in a VERY modified version of the traditional meal. Most of the cutting back won't bother me. The homemade dressing and giblet gravy - the two things I usually DIVE into head first? It's gonna be HARD to be good. But I WILL because one screw-up generally leads to more & I can't afford to gain back anything if I want to stay on track. That looks so good, tho'! I'm drooling over here. And, Ms. Sophie, you look BEAUTIFUL with long OR short hair. You KNOW you're my first-ever doggie love!
