Ingredients:
32 oz. carton chicken broth
2 (13 oz) cans chicken breast
1 (14 oz) can corn
1 large onion (chopped)
3-4 large potatoes (cubed)
1 stick margarine or butter
1/2 cup Half and Half
1 tsp. black pepper
In a large pot or dutch oven, combine all ingredients. Cook covered on low heat for about an hour until potatoes are tender and flavors have married.
Using a potato masher, mash some of the cubed potatoes in pot to add some thickness. (But leave lots of potatoes unmashed.) Cook covered on low heat another 30 minutes or so.
