Blackberry Creek Stuffed French Toast

French_toastI'm getting ready to compile a cookbook for my church, using recipes from people in the congregation. The money we make will go into a fund to remodel the kitchen adjacent to our old fellowship hall. I think I'll include this one. We had it for breakfast this morning and it was good.

I'll include the recipe here. If you decide to try it, you might let me know what you think. Is it worthy of publication?

INGREDIENTS

4 large eggs
1/4 cup Half & Half
1/2 teaspoon sugar
12 slices (about 1/2" thick) of French breadEggs
blackberry jam
spreadable cream cheese
margarine
Ingredietns
Break eggs into a deep plate or pie plate. Add sugar and Half & Half and beat lightly.

Spread about 2 tablespoons of blackberry jam on one side of one slice of bread. Spread about 1 tablespoon of cream cheese on one side of another slice of bread. Place the two slices together.

Place the sandwich in the egg mixture. After about 30 seconds, turn sandwich over and soak other side.

Place on a medium hot buttered griddle or frying pan. Cook on each side until lightly browned. Repeat with remainder of bread. Makes 6 stuff toast sandwiches.

Note to Lori: Thanks for the idea.

Wow, that looks good! I'm thinking it would be extra good with my mom's homemade strawberry jam.
